I created an Internal game to practice in, and only I have joined it. after the new update, 2 new players magically appeared, but their names are not on the player list. What happened?

I have noticed the same. Have you perchance eliminated two playable countries so far? That would leave 8 possible locations that could be filled by a person, and you occupy one of those.

I am the only player to have joined this map, as it is an alliance map and I made sure that I was the only person on that map.

Yes, perhaps I didn't give you a complete answer last night.
So lets say you started as Spain. On the ten player map one slot was filled by you, and 9 were vacant. So it displays 1 slot out of 10 is filled.
Then after a time you conquered all of France. Once France has no provinces left then nobody can join the game as France. So You fill one spot, and another spot is unavailable/eliminated. That leaves 8 vacant slots. Instead of showing that as 8 vacancies it shows 2 slots unavailable out of 10.
You have annexed the territory of two playable countries, so 3 out of 10 spots are not open.

Nobody else has joined my map, and there are also only there are only 2 players in my alliance, and the other person did not join. Who are these two magical players?

Nuke: what countries have you eliminated so far in this game?
Since you have eliminated them you have taken THREE starting spots BY YOURSELF. So three "places" are "not available" to choose if someone wants to join the map.

But there are at least 2 errors (in the system) :
1.)The Player Count
The Player Count gives so or so not realy a correct indication, e.g. here are only 2 players and 2 countries left on the map:
The Info should better specify the actual number of players who ever joined (and / or are still alive), and of all still playable countries. (But from day 7 this is now not longer relevant anyway )
2.) Usually, 6 players are needed to rank the map:

The Historical maps both have player limits so that the game starts faster
