Hmmm. Both China and Turkey would be good targets. If one of them is significantly more competent than the other, or one mistrusts you more than the other, I would backstab them (in the latter case to prevent a preemptive backstab), but if the difference is negligible I'd take out China first. They have a longer border with you, and are closer to your core territories, so if they plan to betray you they can do so much more easily than Turkey could. Also glancing at this map China looks like it has a more powerful military, but that could be because of the way it's distributed, and also because it's hard to tell when the map's zoomed out this far.

Depends on your research levels and unit counts. If you have enough artillery to knock out stacks of AI units, then Germany should be pretty easy. That's all you really need to fight AI countries: ranged units. It's not hard, just takes a bit of discipline, and you should be able to take Germany without losing a single unit.

Rookie mistake was sparing China at the start at all… they have more resources than you. You need to kill them early because once those lv3 milita hordes and resources come to boot there is no challenging them.

Granted these are all from the same game but still. This is not an uncommon situation for my games at all, I just only happened to have screenshots from the Manchukuo game still saved to this system.
(Also I don't like colour mode. In the two screenshots that use it, I turned it on because it was too hard to see how bad the bordergore was otherwise, in the latter case particularly as they were all at war with me.)
