On which device? On mobile, you can tap the left-ish side of the provinces you want in the province administration menu or can long press each province from the map view.
On PC, I think it's ctrl-click

Multi-Select Provinces?
I have accidentally done this multiple times, and would like to know *How* i did it, because i seemingly cannot figure it out.
