1. Once at war with an AI controlled nation, will the AI accept peace offerings if you send them?
2. If peace can be established with an AI, do you need to offer a Cease Fire first. ie. Is getting to peace a 2 step process (Cease Fire then Peace)?
3. Can AI's at peace consider and accept other Diplomacy initiatives such as trade offers?
4, If at peace can the AI ever declare war?

When I send a peace offering or a cease fire offering, do I need to change my status with them to match what is being offered before they will consider it?
Yes, changing your status is how you do it. You can't send AI messages/trades unless it is an inactive player and I don't think the AI will even evaluate a diplo trade in that case.

I've actually seen an AI country accept a peace offer (made via the diplomacy board) in 24 hours.SGTBLT wrote:

That said, once you eliminate the last province of an AI country, it will never accept a peace offer and its orphan naval units will continue to prowl the seas looking for your convoys and naval units.
If you share map with an AI, will they automatically reciprocate? If not, how long will it take them?
AI will not share map
When in war with an AI you change your diplomatic status in the diplomatic menu to shared maps. When you do so the AI will change to peace faster then when you set yours to peace. If you are at peace with an AI and you want ROW then put them on shared maps, they will respond faster with ROW then when you would offer ROW instead.
