Carrier-Airplane Mechanics

I am wondering about using fewer destroyers to defend my carriers. I want to use naval bombers when I am online, but I don't know if they can effectively watch the situation while I am offline. If I leave them on the carriers, and a stack of submarines hit the carriers, would the naval bombers automatically attack because they are in range? Is there any High Command fire setting I could put them to that would make that possible? Or, would I have to put the naval bombers on Patrol over the carrier before I log off for this to work?

Put your naval bombers on patrol and put some destroyers.

Carrier based aircraft on patrol appear to continue their patrol at a specific coordinate even when the carrier moves. it would be great if they would maintain their patrolling position RELATIVE to the carrier's position. This way, if you assign aircraft to patrol ahead of a moving fleet, as the fleet moves so would the aircraft's patrol location.

It would be great to have both options, but yes, absolutely, you are correct that it would be hugely helpful to have the ability to maintain patrol relative to a fleet rather than just over a single location. That would allow us to have a carrier fleet travel safely at night without an extreme destroyer escort.

This is one of the reasons I consider carriers to be generally ineffective.

The amount of micro-management required to use them well is impractical.

What happens in actual usage is that carriers end up being an ineffective distraction.
