Countries are taking my provinces even though I'm not at war with them.

Somehow randomly, my provinces will be given to a neighboring country. They are not at war with me and they did not put troops in it. This has happened 3 times now and I am very confused, could someone please explain?

Most likely revolts due to low morale. You can post troops in newly captured provinces to hold them til day change when morale goes up.

if that province is at 25% morale or lower it MIGHT revolts to another country

You can look in the wiki about "Morale & Uprisings". It says that "If the morale of a province drops below 31%, then it has a chance to revolt on the next daychange. The lower the province morale, the higher the uprising chance. This can be counteracted by keeping units in the center of the province until its morale increases above the threshold.

The higher the garrison strength of the stationed units, the lower the chance of an uprising to happen."
