Trying to find definition of Rally Point and it's use.
Also, I've launched two different Squadrons of aircraft to another city. It ended up getting there as a convoy. Now, it's still a convoy and when I give it marching orders to another city, it says "unable to move without operational airfield. These cities have airfields. Not sure what is going on.

The rally point is a spot you set your troops to travel to. Which unless my memory escapes me there isn't a "rally point" point in the game. There is an add target option though, is this what you are referring to? You are simply setting an additional point on the map for your troops to travel to.
As for the airfield question I would suggest you verify that the airfield in question has not been damaged and needs repaired.

Oh, I didn't know that's what Rally Point does. Today I also learned what Fire Control for ranged units does.

I have found that rally points only work for non-air units. My land and sea units report to the pre-defined rally point with no problems. Whenever I have tried to do it with Air units, it does it by convoy, even though there are properly spaced "fully functional" airbases en route. So I have to set a timer on my phone when my baby Tac Bomber hatches, so that I can set the quicker flight path to the advanced airbase position. If you don't set the rally point dead on the city either (with air units) the convoy will go out of town 10 or so minutes, thus frustrating me more to where I don't use rally points with air units.

If the air units need to refuel, the "need airfield to start" shows until the units are ready to fly. For what it's worth...
