Sorry to be dense but....

How do planes attack each other?

Having difficulty latching on to an incoming attack with my interceptors and indicating 'here hit this' not that bit of farmland a few thousand feet below!

You can either use patrol (your air units will attack any enemy air units in their radius at their patrol tick, and defend if the enemy is using patrol when the enemy patrol ticks). You can also simply click the attack button on your plans and click the enemy planes. If you see the attack arrow that means you are ordering an attack on the planes, since you cannot order an attack on empty space.

just use attak make sure you click exactly on the plane

I see reference to patrol 'tick'. What do you mean? There is a patrol button but not a tick that I can see.

he nmeans the patrol trick not tick

Step 1). Place your planes on patrol over your forces or province

step 2) wait

Your planes will automatically defend your units within the patrol circle and you need to do nothing else.

Incorrect.

A 'tick' in a game is a time at which the game updates something, comparable to a turn in a turn-based game. Every 15 minutes, planes on patrol have a patrol tick in which the game calculates the amount of damage they do/recieve. This is similar to the standard combat tick where the game updates the HP of armies every hour they are engaged in combat.
