If an enemy military sabotage spy reveals all my armies, are the paths that are revealed necessarily the paths they were on at day change? Basically, I'm asking if I can just order my armies to bogus locations like a minute before day change and then switch it back to their true destinations a minute after day change. Will that work? Will the enemy spies pick up the bogus paths?

The actual situation at day change is reveiled. Whatever happens after you cannot see. Otherwise that would be really unfair.
This is what I do middle game to end game when we have wars with another big coalition, before the day passes I give bogus routes , then put them back on track.Machiavelli wrote:

i do it all the time
works very well the first day change, if the person spying on you is smart, it doesnt work so well the second change
