I haven't played the game for a few weeks but I heard there was some kind of major update last week, does anyone know what that was about? What were the major changes?

It also was not meant to be a game update, nothing was released that day. It was more of an announcement stream. So the things that got announced were:
- Bytro and Dorado (which already worked together in many areas) are merging companies. The new company is called Twin Harbour Interactive. This new company will work even more closely together in developing and maintaining the games. This unlocks synergy effects and makes working on the games more efficient.
- Supremacy 1914, Call of War and Conflict of Nations all get merged into one Franchise/Brand: "Supremacy" (think of the Total War Franchise, but ours is called Supremacy). So from now on our style of games will be known as Supremacy games.
- The games got renamed accordingly and are now named Supremacy: 1914, Supremacy: Call of War 1914 and Supremacy: World War 3
- There will be a new Hub playsupremacy.com where all 3 games can be accessed (your existing CoW account works in each of the games already)
- There were teasers for each game about new content which might be released in the future. For CoW, it was teased that the team is looking into an adaptation of the Heroes/Generals feature.
- It was teased that a new game is in development and that you will hear about it soon.
Oh and this week there was a "real" game update. A brand new Event map is coming out, see news post.

Also, by "Heroes" would they be like the Officer units in Conflict Nations, that give certain bonuses to units in their stack?

Parts of it yeah, like applying buffs to armies. Overall it would be a bigger feature than the Officers in CoN tho. Even for CoN it was announced that they will be overhauling their Officers to work more like that Heroes/Generals system from S1914.

What about players using mulitple accounts in matches and entire alliances wolfpacking against other players. These are big problems that ruin the fun of the game for many, will the devs resolve these issues in the future.. Almost every dedicated call of war PC player has or had made a 2nd account in the past at some point. How will they counter this? Reporting cheaters is a way but by the time you realize that someone is cheating its already too late.
Why make it so that you can just make another profile in a few clicks. They should introduce email verfication so that players cant just type in any random available email, make a new account and continue cheating and those who already have more than 1 profile will now have to verify that email first to join any future games..

I know, that's a problem in CoW since its release. It was and is always an ongoing battle. There is no solution that will prevent it permanently. Players can report multiaccounts. When they get confirmed as multi, they will lose their accounts. Maybe in the future we might be able to bring more automatization into the mix, to spot and deal with them earlier.
I think it will also get better once CoW gets a proper metagame (meaningful account progression outside of game rounds). As we announced in the livestream, currently the team is looking into a Hero/Generals metagame. Players will think twice risk getting their main accounts banned where they collected all their Generals.

would the Heroes/Generals have to be paid for or earned through gameplay, like through certain specific challenges, also would there be limited edition heroes or just main heroes that are always earnable?

Nothing is set in stone yet, but I can tell you how it was implemented in S1914: Heroes can be earned for free, and the medals to level them up can also be earned for free. But you can get those medals faster by buying them in the shop (rotating offers with limited capacity, so no one can immediately max out all heroes). The ways to earn those Hero medals is right now tied to Operations, so you can't earn medals for all of them at the same time. So in a sense this makes some of them more limited, but also not really? Right now there is no limited edition hero tho. Maybe there will be in the future.
