We use the Legendary Illustrious Class (the ships we ruined the Argie invasion of the Falklands) I understand they're more 1970/80, but, we let that slide for the Russians, so why not the Brits?

I don't believe so, the RN just got Nuclear carriers. If I was you, re-use the Majestic Class, they did it for the German carrier.
